My favourite Christmas fruit cake

This is still my favourite Christmas fruit cake.从前,我会把所有的水果都买下来,浸泡几天,然后在烤箱里烤几个小时。But then I had lots of children and this cake is so great to make at the last minute.I do pour cointreau or brandy over the top of it while still hot for an adults version.我也冷冻了蛋糕——用箔纸包好放在冷冻袋里,或者你可以把它包起来放进冷冻柜里。但味道很好,是提前制作的完美之选。Happy baking…….

  • 500g mixed dried fruit
  • 50克糖霜樱桃(可选)
  • 450g can crushed pineapple
  • 125g unsalted butter,立方形的
  • 1 cup sugar (I used caster)
  • 1 tsp bicarb soda
  • 2 eggs,lightly beaten
  • 1杯普通面粉
  • 1杯自养面粉
  1. Place dried fruit,pineapple (don't drain it),黄油,糖和小苏打放在平底锅里,用中火煮沸。
  2. 从炉子上移开,待其冷却。I like to transfer to a big bowl and leave it to cool

  4. Pour into a lined square or round tin and place in a preheated oven 180C/350F and bake for at least 45 minutes to 1 hour.
